As millennials, we are literally always on the go and finding time to prepare meals, especially healthy ones, can be difficult sometimes. So I have complied some of my favorite quick and healthy meal prep ideas that can be made in no time or even on the go!
My first Quick Eats is Eggs In A Jar, literally scrambled eggs in a mason jar. When I first took this to work and microwaved it, I had the entire break room in awe that you could actually microwave eggs, who knew! Not only can you microwave them, but they cook in less than 2 minutes, now I have time for that.
I like my eggs with a little more substance and flavor, so I tend to add different ingredients such as onions, broccoli, cheese, scallions etc., the options are endless! Plus this is a healthy alternative to stopping at McDonalds and grabbing pancakes or a breakfast sandwich from the local bagel place!
